SLOW COOKER VEGETARIAN TACO SOUP

Prep time: 15 minutes
cook time: low 6 hours, high 3 hours
4-6 servings
Ingredients:
1 pound meatless ground crumbles
3 cups of water
1 15 to 16 ounce can red kidney beans, rinsed & drained
1 14.5 ounce can Mexican-style stewed tomatoes, undrained
1 10.75 ounce can condenses low sodium tomato soup
1 1.25 ounce package of taco seasoning mix
Crushed tortilla chips
Shredded montery jack flavor cheese alternative
In a 3.5 or 4 quart slow cooker combined meatless ground crumbles, water, beans, undrained tomatoes, tomato soup and taco seasoning mix.
Cover and cook on low heat setting for 6 to 8 hours or on high heat setting for 3 to 4 hours.  Ladle soup into  bowls.  Sprinkle with tortilla chips and shredded cheese alternative.

CREAMY NON-CHICKEN AND VEGGIES
Ingredients:
1/4 cup canned 98% fat-free cream of mushroom condensed soup
1/4 cup lite sour cream
1/2 teaspoon chopped garlic
1 cup frozen cauliflower
1/2 cup frozen mixed vegetables
1/4 cup canned sliced mushrooms, drained
2 meatless naked chik'n cutlets
salt to taste
Directions
Preheat oven to 375
In a bowl mix soup, sour cream, garlic and salt.  Add cauliflower, mixed veggies, and mushrooms and stir to coat.  Set aside.
Place a large piece of heavy duty foil on a backing sheet.and spray with nonstick cooking spray.   Place chik'n in the center of the foil and top with the veggie mixture.  Fold and seal the top and bottom edges of the foil,and then the side edges to create a well sealed packet.  Place the baking sheet in the oven and bake for about 35-40 minutes.
This recipe is for 2 servings.  


SLOW COOKER NO MEAT CHILI
Ingredients
2 14.5 ounce cans Amy's low fat black bean vegetable soup
1 14.5 ounce can diced tomatoes with garlic and onion
12 ounces Soyrizo meatless soy chorizo cut into 1/2 inch slices (make sure you take off the plastic wrapping before slicing)
Montery Jack & cheddar cheese (optional)
in a 3.5 - 4.5 quart slow cooker add soup , undrained tomatoes and Soyrizo and stir.  Cover and cook on low setting for 6 to 8 hours or on high setting for 3 to 4 hours.  Top with cheese if desired.

NON CHICKEN NACHO BAKE
2 Quorn Naked Chik 'N cutlets
1/2 cup salsa
1/4 lite or fat free sour cream
1/2 crushed tortilla chips
1/2 cup shredded Monterey Jack & cheddar cheese alternative
  (you can use regular cheese if you prefer)
Preheat oven to 400 degrees F.  Line a baking sheet with aluminum foil.  Spray with cooking spray.  Place Chik "N Cutlets on the baking sheet.  Top each cutlet with salsa, sour cream, and crushed tortilla chips.  Place in the oven for 20 minutes.  Remove from oven and top with cheese.  Cooking for an additional 10 minutes.  Remove from oven and let set for about 2-3 minutes.
